Skewers with fried polenta, mozzarella and speck

  • 1/2 package of Polenta Valsugana Express with whole-grain flour
  • 20 small mozzarella balls
  • 10 slices of speck
  • corn oil for frying
  • salt, pepper

Preparation

Prepare the polenta: in a large pot, bring to boil water and salt. Once the water starts boiling, gently add the maize flour and mix well. With a wooden spoon, always stir in the same direction while the water is boiling. Cook for 8 minutes.

Pour in a baking tray and level the surface. Allow it to cool.

Chop the polenta into slices not too thin.

Then cut into triangles and fry in heated oil.

Drain the polenta crisps on paper towel.

Add salt and pepper.

Sprinkle the mozzarella with pepper.

Wrap a slice of speck around the mozzarella. Then thread onto a skewer alternating with fried polenta crisps.
