Lamb skewers with grilled polenta and fried marinated courgettes

Ingredients

  • 1 package (2 trays) of Polenta Valsugana Ready-to-Serve
  • 600 g of lamb skewers
  • 1 stick of thyme
  • 2 leaves of sage
  • fried marinated courgettes:
  • 6 courgettes
  • 1 cup of white vinegar
  • 1 bunch of mint
  • 2 cloves of garlic
  • salt, pepper
  • frying oil

Ingredients

  • 600 g of lamb skewers
  • 1 stick of thyme
  • 2 leaves of sage
  • fried marinated courgettes:
  • 6 courgettes
  • 1 cup of white vinegar
  • 1 bunch of mint
  • 2 cloves of garlic
  • salt, pepper
  • frying oil

Preparation

Season the skewers (or arrosticini if available) with ground pepper and chopped herbs.

Cut the courgettes into slices. Fry in boiling oil, drain and put on a plate.

Add salt and season with mint leaves and garlic cloves.

Continue cooking until you finish the courgettes.

Drizzle with vinegar and let rest and marinate for at least 2 hours.

Slice the ready-to-serve polenta, brush with olive oil and grill.

Also grill the skewers, then add salt.

Arrange the polenta slices on the dishes, put the skewers on top and cover with the fried marinated courgettes.
