Caprese with polenta

  • 500 g of tomatoes
  • 500 g of mozzarella
  • oregano
  • fresh basil
  • extra virgin olive oil
  • salt, pepper

Preparation

Prepare the polenta: put a pot of water to boil and add salt. Once the water starts boiling, slowly add the maize flour and mix well. With a wooden spoon, always stir in the same direction while the water is boiling. Cook for 8 minutes.

Lay the hot polenta in a baking tin and let it cool. With a round cookie cutter, cut out some discs.

Brush the polenta discs with oil and grill on both sides.

Slice the mozzarella and the tomatoes.

Chop the basil, add some oregano and season with oil, salt and pepper.

Arrange the layers on the dish, alternating the ingredients.

Season with the sauce and garnish with fresh basil.
