Polenta pizza with mushrooms and parmesan cheese

  • 1/2 package Polenta Valsugana Express Yellow
  • 200g grated parmesan
  • 50g milk
  • 150g porcini mushrooms
  • thyme
  • salt
  • extra virgin olive oil
  • black pepper

Preparation

In a bowl, mix the parmesan cheese with milk and pepper.

Put a pot of water to boil and add salt. Once the water starts boiling, slowly add the maize flour and mix well. With a wooden spoon, always stir in the same direction while the water is boiling. Cook for 8 minutes.

Grease a round baking tin and pour in the polenta. Level and let it cool.

Melt the cheese in a bain-marie to obtain a soft cream mixture.

Put it on the polenta pizza.

Clean the mushrooms with a wet cloth. Slice and flavour them with butter. Add salt and lay them on the parmesan cheese.

Bake at 170° for 30 minutes. Remove from the oven and garnish with thyme. Serve.
