Polenta mini tarts with smoked salmon and balsamic onion

  • 1 package of Polenta Valsugana Express Yellow

  • 300 g of smoked salmon
  • 300 g of onions
  • 1 spoon of sugar
  • extra virgin olive oil
  • 100 g of balsamic vinegar

Preparation

For the onions: cut the onions into thin slices and lay in a pan with a little oil, sugar, salt and vinegar. Cook for 45 minutes at a very low flame.

Prepare the polenta: put a pot of water to boil and add salt. Once the water starts boiling, slowly add the maize flour and mix well. With a wooden spoon, always stir in the same direction while the water is boiling. Cook for 8 minutes. Add pepper and chopped parsley.

Lay the polenta in a baking tray, flatten and let it cool.

With a cookie cutter, cut out some tartlets.

Lay the tartlets on a platter and garnish with slices of salmon and a teaspoon of balsamic vinegar. Add parsley and serve.
